Holy Hummus Batman


Puree in a blender or food processor the following

2 cans of chickpeas
4 cloves roasted garlic
1 tablespoon fresh rosemary minced
1 tablespoon parsley minced
1/3 cup of tahini
6 tablespoons of lime juice
sea salt
warm water (to thin to the desired consistancy)

Homemade Pita Chips


Ingredients:
Pita Bread
Olive Oil
Cayenne Pepper
Dried Garlic
Parsley
Sea Salt
Directions:
Preheat oven to 400 degrees. Cut pita bread into triangles (or desired shapes). Brush lightly with olive oil. Sprinkle with seasonings (adjust to your tastes) and bake 10 minutes or until golden brown.

Basic Hippy Nut Granola

Ingredients (I prefer organic):

3 c rolled oats
1 c slivered almonds
1 c pecan halves or cashews (high fat nuts)
3/4 c shredded coconut
1/4 c plus 2 T dark brown sugar
1/4 c plus 2 T maple syrup
1/4 c vegetable oil
3/4 teaspoon salt
1 c raisins or dried cranberries

Directions:

Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl. Add raisins/dried cranberries and mix until evenly distributed.

Pita Chips

Ingredients:

Pita Bread
Olive Oil
Sea Salt
Cayenne Pepper

Directions: Split each Pita in half to make a thinner selection and then cut each round into 6 pieces. Mist with Olive oil and sprinkle on salt and cayenne pepper.

Place in 400 degree oven for 10-15 minutes until crispy and golden brown.

Muddy Buddy Mix


This is one of my favorite "cookin' with the kiddos" recipes. Try this one out with your favorite little person.


Ingredients:
9 cups Corn Chex®, Rice Chex®, Wheat Chex® or Chocolate Chex® cereal (or combination)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Directions:
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
