Macaroni Salad


Ingredients:
1 package of salad macaroni, cooked and drained
6 hard boiled eggs, peeled and minced
1/2 of a can of petite olives, minced
1 red onion, small diced
4 tablespoons of Del Monte Pickle Relish
3/4 cup Best Foods mayo
6 tablespoons of yellow mustard
1 tablespoon garlic powder
salt & pepper to taste
Directions:
Mix ingredients together and chill before serving.

Allie's Butter Lettuce Salad

INGREDIENTS
2 cups cranberries/blueberries halved
1 tablespoon fresh lemon juice
2 teaspoons sugar
5 tablespoons olive oil
4 tablespoons red wine vinegar
1/4 teaspoon salt
1/4 teaspoon fresh-ground pepper
3 heads butter head lettuce of your choice
3/4 cup dried cherries
1/2 cup crumbled Roquefort cheese

PREPARATION
1. Make the vinaigrette: Place the cranberries & blueberries, 1/4 cup water, lemon juice, and sugar in a saucepan over medium-high heat, stir to combine, and cook until berries soften - about 10 minutes. Run the berries and any liquid through a food mill, strain the mixture, discard the solids, and return the liquid to the saucepan. Cook over low heat until reduced to 1/3 cup - about 20 minutes. Cool completely. Whisk the reduced cherry liquid, olive oil, vinegar, salt, and pepper together in a small bowl and set aside.
2. Assemble the salad: Toss the lettuce, dried cherries, and Roquefort cheese together in a large bowl. Drizzle with dressing and serve immediately.

Holiday Spinach Salad

Ingredients:

1 bag of pre-washed spinach
1 c chopped apples
1/2 c chopped red onions
1/2 c chopped pecans
1/4 c craisins (dried cranberries)
4 sticks of bacon crumbled (reserve grease)
1/4 c crumbled blue cheese
6 T olive oil
1 T dijon mustard
1 T brown sugar

Salad Dressing Prep:

In a heat safe bowl combine 2 T bacon grease with brown sugar. Stir until sugar desolves and add dijon mustard. Slowly whisk in olive oil until frothy dressing is ready. Reserve to toss with salad.

Salad Directions:

Poor salad dressing in the bottom of a large wooden bowl. Add apples, pecans and onions. Top with spinach, blue cheese crumbles, craisins, and bacon. Toss before serving (by leaving the dressing on the bottom the salad will not wilt before serving)
